Hello, my name is Alison and it’s official… I love chocolate. It’s been a lifelong passion, starting when I used to spend all the ‘only in an emergency’ money mum gave me on chocolate! Over the years I’ve moved away from buying the cheapest bars from the corner shop, to being able to appreciate the delicious difference of bean-to-bar chocolate, and now I’ve been lucky enough to turn my love of chocolate into a business… read more
Bean-to-bar chocolate is exactly as it sounds. Our local, artisan makers source the best cocoa beans from farmers around the world and make them into the bars we use in our tasting experiences. The cocoa beans are roasted to create their intense flavours before raw cane sugar is added. These two natural, unrefined ingredients are stoneground into fine granules initially, then finer still into liquid chocolate. The chocolate is then aerated, kneaded and poured into the bar blocks. The bean-to-bar chocolate is then left to mature, which develops the intensity of the flavour.
My idea for Choklet came from wanting to work with this incredible bean-to-bar chocolate after I realised how amazing it can be when paired with artisan drinks and gourmet foods. It’s a new way to enjoy the true taste and flavour of chocolate and I am so excited to be able to share this with you.
